I thought you made alternative wines styles?  This is a Sav Blanc!

This is a Sauvignon Blanc fermented on skins.  This simply means we’ve made it a bit like a red wine.   Rather than running off the fresh pressed juice and fermenting only that, we crushed the grapes then put everything into the tank, skins and all and let it do its thing.

The result is a wine that is full of texture in the mouth, with ginger, elderflower, lemongrass, and white grapefruit aromatics that gently give way to more traditionally Savvy aromas.

Great with Asian and spicy food, although seafood is its fave partner in crime.

On the volcanic subsoils of Rockbank vineyard in Sunbury, and picked just as ripeness moves to the early tropical scale but holds vibrant acidity.

Raised

Wild fermented on skins at low temperatures and then left for 158 days with minimal air contact.

Really textural in 18, white grapefruit, apricot, and ginger aromatics.
